A couple of years ago Simon introduced me to what a good Gin & Tonic should taste like, since then I have fallen in love with this simple drink. It immediately makes me think of hot summer afternoons spent lazing around, and just enjoying the moment. Since I discovered my love for gin I have played with quite a few different drink. From complex cocktails to simple variations of the classic G&T. This time I bring you an elegant cocktail, that is fruity and floral but not too sweet. The perfect getting ready drink for a girls night out.

Lightly sweetened fruity floral cocktail.
Raspberry Syrup
- 1/2 cup water
- 1/2 cup sugar white sugar
- 1 cup raspberries
Cocktail
- 1 1/2 oz gin
- 3/4 oz liqueur framboise
- 1 oz raspberry syrup
- 3/4 oz freshly squeezed lemon juice
- 3 drops rosewater
- 1 egg white
- 1 1/2 oz soda water or tonic
For the Raspberry Syrup
- In a small saucepan heat the water and sugar over medium heat until the sugar is completely dissolved. This should only take a few minutes.
- Remove the pot from the heat and let stand for about 5 minutes before adding the raspberries. The gives a lovely fresh flavour rather than the jammy flavour of more cooked berries.
- Puree the syrup either in a blender or with a hand blender.
- Strain the syrup through a fine mesh sieve and leave to cool completely.
For the Cocktail
- First add the egg white to the shaker and shake for about 10 seconds.
- Now add the remaining ingredients to the shaker except for the soda, top with ice and shake for 30 seconds.
- Strain the drink into a glass and top up with soda or tonic.
Notes
- Use leftover syrup to make a raspberry gin & tonic for those evening you can't quite be bothered with the extra steps.
- The syrup and a few drops rose water topped with soda make a great non alcoholic option.
