Pumpkin Pie Granola Recipe - makes the perfect fall breakfast

I’m pretty much addicted to this granola… this is the second batch and its already half gone! Its hard enough not eating it all straight out of the oven. For breakfast add some yogurt and milk and its yum. I have also been adding a spoonful of extra apple sauce on top of the yogurt which adds that special little touch.

Ingredients
  1. 5 cups rolled oats
  2. 2 tsp. pumpkin pie spice
  3. 1/2 tsp. salt
  4. 1/4 cup pepitas
  5. 1/4 cup flaked almonds
  6. ¾ cup brown sugar
  7. 1/2 cup pumpkin puree
  8. 1/3 cup applesauce
  9. 3 tbsp. maple syrup
  10. 1 tbsp. molasses
  11. 1 teaspoon vanilla extract
  12. 3/4 cup dried cranberries
Instructions
  1. Preheat the oven to 325° F/160° C. Line 1-2 large baking sheets with parchment paper and set aside.
  2. In a large bowl combine oats, spices, salt, pepitas and flaked almonds. Stir until well combined.
  3. In a medium bowl, stir together brown sugar, pumpkin puree, applesauce, maple syrup, molasses and vanilla extract.
  4. Pour wet ingredients into oat mixture and stir until the oats are evenly coated. They will be moist. Evenly spread the mixture onto the prepared baking sheets.
  5. Bake for 20 minutes. Remove pan from the oven and stir. Bake for an additional 15-20 minutes or until the granola is golden and crisp.
  6. Remove from the oven and stir in dried cranberries and you can sprinkle in a few extra pepitas too if you like. pepitas. Let cool completely. Store in an airtight container.
