Here is a bit of a different direction for a sandwich but if you like roast eggplant then you will like this little baby. Its nice and easy to make the pesto and roast all the veggies at the beginning of the week and then you just have to quickly throw it all together each morning.
Roast Vegetable & Pesto Bagel
• 100g fresh basil
• 1 clove garlic
• 20g pine nuts
• 150ml olive oil
• 70g parmesan cheese
• 1/2 eggplant
• 1 zucchini
• small bunch of asparagus
• goats cheese
1.To make the pesto place the basil, garlic, pine nuts, olive oil and parmesan in a food process or blender, blend until fully combined into a paste.
2. Slice the eggplant and zucchini and arrange on a baking tray. Drizzle with a little olive oil and and a pinch of salt then bake at 200°c until the vegetables are soft.
3. Add a little butter to a fry pan and sauté the asparagus for just a couple of minutes, you want to be careful not to overcook it.
4. Once the vegetables have cooled you can assemble you sandwich. Start with a generous layer of pesto, then a layer of eggplant and zucchini, follow with a few asparagus stalks and then sprinkle with goats cheese.
